We had such an amazing time at the sushi cooking class! We started by learning some really interesting history about sushi and shown how to make it, which gave me a whole new level of appreciation for how much patience and detail goes into it. Then, we got to make our own sushi and it’s harder than it looks but still so fun! A must for sushi lovers. Chef Jenny and Chef Andrew were incredible! Both so kind, professional, and accommodating. Chef Andrew gave a clear and engaging demonstration, and Chef Jenny was super helpful when it was our turn to create our sushi. The best part was the sushi was fresh and delicious! It felt so rewarding to walk away with a new skill, and I’m already excited to come back with some friends. I highly recommend this experience for anyone looking for a fun, hands-on, and delicious activity!

This is first and foremost a cooking school, which has been run by the talented French-trained chef, Pascal Dionot (who taught me to cook at L’Academie de Cuisine in Washington, D.C. many moons ago), and is now ably run by Pascal’s son Jeffrey. I have had the privilege of assisting at the school during several visits to Phoenix. It is well-equipped and well-staffed. If you want to learn to cook, not just individual dishes but classic technique you can apply to the world of cuisine, either as a home cook or at the restaurant level, this is not only THE place in Phoenix/Scottsdale, but I would put its curriculum and style up against any cooking school in the country. The school offers short, fun courses for home kitchen warriors, a professional curriculum, and team-building cooking experiences. Now that we live in Phoenix we attend some of the school’s wine dinners. Most recently we attended the dinner featuring one of the gems of Paso Robles: Daou, which we love. The wine dinners feature the food of the teaching chefs, in this case my chef teacher and now close friend, Pascal. Each of the six courses was spot-on, from the Gougere amuse, to the corn and crab chowder, to the shrimp ravioli in a wanton wrapper with a shoyu-based beurre blanc (an homage to the great, late Chef Jean-Louis Palladin), to the pork tenderloin with surprisingly likeable fennel (Sarah’s not a big fennel fan), to the surprisingly tasty Filet Mignon (I’m not a big filet fan), to the Grapefruit Crème Brûlée. The wines paired perfectly, even the Chardonnay paired with the Crème Brûlée. Highly recommended for teaching or eating.

Attended this class with my team and, overall, the experience was enjoyable. The food was delicious and clearly made with care. However, there was a major oversight when it came to accommodating dietary restrictions. A few members of our group had food allergies, and unfortunately, they weren’t provided with suitable alternatives—leaving them unable to fully participate in the meal. For an event priced at $100 per person, I would expect more attention to inclusivity and detail. While the quality of the food was high, the lack of accommodations made the experience feel incomplete and not worth the premium price..

I am planning on taking their six month advanced cooking class starting in July when I retire. I audited one of those classes and last Sunday went to one of their special cooking events, this one featuring a Nicoise Salad and lemon curd puff pastry brunch menu. It was one of the best things I have done in Scottsdale in all the years I've been here! There were two tables prepared for the students/guests, with flowers, no less! Chef Sharon gave us an introductory session where told us all about melons, how to select, cut, and season them, what kind of prosciutto to buy for wrapping the melons later, and of course instructions on how to grill them later in the main kitchen. After that we went into the main teaching kitchen where all four prep tables were ready with all the ingredients necessary to make the brunch. Chef Sharon gave another VERY informative mini-lecture on a whole host of topics like the salmon selection, what salt to use, how to cut shallots, proper onion-cutting technique to avoid tears (and injured fingers!) how to make the vinaigrette, etc. Then everybody chose a table and each team prepared a portion of the breakfast. With guidance from the two other chefs we all helped make what was without a doubt THE BEST BRUNCH OF MY LIFE!!! We made a Nicoise salad for the ages, with simple, yet exquisitely flavored salmon, couscous with vinaigrette, boiled potatoes, fresh tomatoes, green beans, PROPERLY boiled eggs, and WORLD-CLASS lemon curd tarts. They had fresh-squeezed OJ and for those wanting a little something extra, mimosas made with the same OJ. It was a fantastic meal, and I learned more about cooking in those three hours than I have in the past five years. (Granted, I don't watch cooking shows, but still!) I can't recommend these group events enough. You learn a lot, work a little, and take home a recipe that will wow everybody who has the privilege of tasting your new Nicoise salad recipe!!! I'll close by also saying Chef Sharon and the two other chefs were incredible. They really care about their craft and about making sure everybody learns something valuable in the process.
