What a wonderful place! The atmosphere is calm and inviting, staff are extremely friendly, service was lightning fast, and (most importantly), the food was beautiful, creative, and delicious. You absolutely don’t have to be Plant-Based to love the food here. The “chicken” drumsticks were crispy and warm, the Lemongrass tofu savory, and the Hainan “chicken” had an amazing texture and crispy “skin.” Can’t wait to come back and try new dishes.

Took myself on a solo date here and ordered the Banh mi with the vegan ham and Thai iced tea. Although I’ve been vegan for many years, this was my first vegan Bann mi and it didn’t disappoint! The ham was so surprisingly good and not too overwhelming like other meats. They also have the option to substitute tofu instead, if meat alternatives aren’t your thing. And I’m always excited for a vegan Thai iced tea, although it wasn’t as tasty as the sandwich. On top of that, the people were kind and the service was quick! I was in and out in just 30 minutes. The atmosphere is also refreshing and light. Highly recommend!

Cute new vegan spot! They have a good variety of proteins (vegan “chicken” and tofu and vegan “shrimp”). The vegan chicken is delicious and the tofu was nicely cooked. Their pho has a good broth and lots of vegetables in it. We got the fried “calamari” app which has a surprisingly octopus like texture! I got a lychee boba which was delicious. I’m going to have to come back to try the Thai tea! Overall a cute spot with good plant based food!

Passing through Boulder and looking for a quick bite, I stumbled upon Lotus Moon Pho after a quick search. The reviews seemed decent, so we gave it a try—but unfortunately, it fell short of expectations and left us feeling pretty underwhelmed. The service was just okay. Our server dropped off water for the table and never returned—not even to check in or refill. I ended up walking to the front just to ask for napkins. The biggest letdown, though, was the food. We ordered spring rolls, pho, and a banh mi. Both the spring rolls and pho were incredibly oily—you could see it pooling on top, which definitely took away from the experience. The banh mi, on the other hand, was decent—the bread was light and fluffy, and the flavors were good. Overall, not the warm, comforting meal we were hoping for. We wouldn’t return if we find ourselves in Boulder again.

I really really wanted to like this place, but the flavor profile of this food is much too subtle for my palate. (I apologize to the owner for using the word "bland" in the first version of my review. That word has a negative connotation and I should have been more descriptive.) My friend and I had the vermicelli bowl with lemongrass tofu, and the Hainan "chicken". We did use the provided sauces that came with the dishes, but the flavors were still too light for me. My friend thought they were OK.
