Outstanding food, delicious dishes, good service. Tables are rather small and positioned way too close together, noise level was quite high. Wine prices are rather high: steak, lamb and pork dishes were outstanding. Focaccia was great, fresh and warm, just pieces of it were humongous, so we had to break them apart ourselves. Tip of 6% for kitchen was included on the bill.

My sister recommended Blackbelly and so glad she did. We stopped in at an odd time and were able to sit at the bar. Both bartenders were great. So friendly, passionate about their craft and the restaurant, and made great drinks. Onto the food. We started with the focaccia and seeded sourdough. OMG - some of the best bread and butter I have had. Ever. The focaccia had a perfect crispy crust with a light interior and the right amount of wonderful olive oil on it. Wow. Then the seeded sourdough. Great deep sourdough flavor with a perfect crust, and the seeds were a great flavor addition. I love bread and appreciate a great butter and this was it! We also had the ricotta and preserves. Kind of simple yet delicious and a great mix of flavors. Almost decadent. Sadly we didn’t save much room for the burger and raw veggies with dip but did our best. The veggie plate was beautiful and full of unique and tasty veggies. Light yet satisfying. The burger was good but they had me at confit garlic in the fries. What wonderful nuggets of goodness!! We definitely enjoyed our meal and will be back for more!

First visit for us and the bar for Boulder fine dining has been raised to a new height! The entire team was so very friendly, attentive and welcoming - special thanks to our server Anthony! Pigs Ears, Focaccia bread, Whole Chicken, Short Rib Pasta, Chocolate Pistachio Tart and Artisan Cheese plate were amongst our dishes. Shared family style it was a perfect meal for 4 adults. Visited: Mid-May 2025 | Dinner | Party of 2 Blackbelly in Boulder (with its Denver outpost now drawing buzz) carries weight--not only from its reputation as a whole-animal, sustainable operation, but also from its Michelin Green Star nod for sustainability. Naturally, expectations were high. Unfortunately, the experience didn't live up to the hype. Starters: Overpowered and Underwhelming We began with the Roasted Bone Marrow, which came sparsely portioned. Only about half of the bone contained marrow--arguably normal, but not ideal when paired with two pieces of overly oily toast. The pickled onions were aggressively acidic, dominating rather than complementing the dish. The Chicharrones were... fine. Just fine. Crisp and salty, but forgettable. Not a starter that leaves an impression or sets the tone for a special meal. Mains: Long Wait, Little Reward We waited nearly 40 minutes for our mains--an unusually long delay with no clear explanation. The Crispy Pig Ears, which I was genuinely excited about, were a letdown. As a longtime fan of this ingredient, I found the deep-frying and sugary red pepper jelly completely obliterated the subtle, gelatinous texture and flavor pig ears are celebrated for. In the end, the ears became just a vehicle for the jelly. The result? A dish that could've been made with anything and tasted the same. The 5oz Buckner Loin (lamb) didn't fare much better. Though ordered medium and appearing cooked accordingly, it somehow tasted dry and under-seasoned, lacking the richness or tenderness good lamb should deliver. The accompanying crispy sweetbreads were charred to the point of bitterness--blackened, dry, and tasting closer to burnt wood than delicacy. Presentation-wise, the dish lacked any visual appeal. And at $55 for the loin alone, the price felt unjustified--especially when you compare it to equally-priced signature mains in fine dining institutions. Drink & Service Notes The strawberry mocktail was delightful--bright, balanced, and refreshing. A rare bright spot in an otherwise unremarkable meal. Service was warm and attentive overall, although we were handed a set of dirty tongs, which felt out of place in a restaurant of this price point and prestige. We dined outdoors, so I can't comment on the interior atmosphere, but the patio was comfortable. Final Thoughts Our bill also included a 6% kitchen surcharge, which diners should be aware of--especially when value already feels questionable. In the end, while Blackbelly's mission is admirable and its service professional, the execution in the kitchen fell flat across the board. It's hard to reconcile the restaurant's accolades with the actual experience. Perhaps we caught them on an off night, but with so many exceptional dining options in Denver, I wouldn't rush back.

Yes, yet another five star review for Blackbelly. However, I want to say- vegans, do not despair! There's something here for you too! The bread is phenomenal and you can get an olive oil dip rather than the regular, dairy-based one. The veggies are the freshest I've seen anywhere and carefully prepared. Plus, they can make a vegan version of the pasta dish, which is a delight. And while their cocktail menu is extensive, they also have a wide variety of non alcoholic drinks, including I Love Lamp, which is their take on the Arnold Palmer. Refreshing and not too sweet.
