Avoid!!! They use plastic cutting boards. Read up on the dangers of plastic cutting boards and microplastic exposure. Every time the knife hits the cutting board, billions of micro plastic particles are driven up into the food. Always use wood!! The cooks are also touching thermal receipts then immediately touching the food. Thermal receipts contain very high amounts of BPA and the person handling the food should avoid touching them at all costs during food preparation. Totally unacceptable, especially considering UTSW is a place where the effects of microplastics are being studied.
